Next week I’m attending a Christmas in July dinner with work, so I decided I would get into the into the Christmas spirit a little early and bake this Gluten Free Spiced Chocolate Fruit Cake.
I feel like most people either love or hate fruit cake. Do you agree? I for one LOVE fruit cake and think it deserves to be eaten a few times a year rather than just at Christmas time! So with that being said, I decided to add chocolate to the mix. The chocolate flavour is subtle but makes this cake so so good. I will definitely be making it again at Christmas!
Thanks, for stopping by.
- 1 kg mixed fruit
- ½ cup freshly squeezed orange juice (Approx. 2 large oranges)
- 250 g unsalted butter, chopped
- 1¼ cups firmly packed brown sugar
- 2 cups gluten free plain flour
- ¼ cup cocoa powder
- ½ tsp ground gloves
- ¾ tsp nutmeg
- 1 tsp ground cinnamon
- 100 g dark chocolate, chopped
- 3 large eggs
- ⅓ cup freshly squeezed orange juice, extra (Approx. 1 large orange)
Preheat oven to 150°C and grease and line a 19cm square base cake tin with 2 layers of baking paper.
Stir the fruit, orange juice, brown sugar and butter over medium heat in a large saucepan until the butter and sugar has dissolved. Set aside for 10 minutes to cool.
Add the flour, cocoa powder, cloves, nutmeg and cinnamon to the fruit mixture, stirring to combine. Then add the chocolate and eggs and stir well to combine.
Pour the cake mixture into the cake tin and bake for 90 minutes or until a skewer inserted into the middle of the cake comes out clean. Remove the cake from the oven and pour the remaining orange juice over the cake before allowing it to completely cool. Serve with a dollop of cream or custard if desired.
