Gluten Free Spiced Chai Cupcakes

If you like Chai then you will LOVE these Gluten Free Chai Spiced Cupcakes! Even if you haven’t tasted chai before I still think you will love these cupcakes. I infused a blend of chai tea in the milk used to create the cupcakes and used a selection of chai spices in the mouth watering buttercream. The end result was a perfect balance of chai flavour without overpowering the recipe.

My piping skills are still a “work in progress” but I love these cupcake liners. If anyone knows of a great online store to buy cupcake liners from I’d love to hear from you. Just comment in the section below?!

Mini Carrot Cakes Gluten Free

Gluten Free Mini Carrot Cakes

Today II’m sharing these Gluten Free Mini Carrot Cakes with Cream Cheese Icing. I was craving cream cheese icing and these carrot cakes certainly hit the spot (and then some) for afternoon tea. Though in all honesty I made these cakes for friends, as a way to say thank you for all their recent support.

Speaking of support, I couldn’t have made these cakes without Jesse’s help (that’s my husband for those new to my blog). I’m sure I irritate him at times but I don’t think he truly minds helping me in the kitchen when he gets to “taste test” the recipe at the end of it all!

Gluten Free Vanilla Cupakes with Blackberry Buttercream

Monday night I was inspired to make these Gluten Free Vanilla Cupcakes with Blackberry Buttercream. We had an abundance of blackberries in the fridge and a few new piping tips I wanted to play with, so it was perfect timing. They turned out perfectly and were an absolute hit with the staff from Lyla’s childcare! I may have eaten one or two myself, but I couldnt resist sending Lyla’s carers a treat, as all the staff have been so great with her since she started.

These cupcakes are so light and fluffy and the blackberry buttercream adds a sweet but slightly tart flavour. Just YUM! The cupcake recipe is a gluten free version from Wedding Cupcakes that I have been meaning to share for a while. I’ve also shared a pretty tasty Peanut Butter Cupcake recipe if you’re looking for a different flavour.

Wedding Cupcakes

Wedding Cupcakes

I decided I would make my own Wedding Cupcakes and although their was a few hiccups along the way I am really proud of how they turned out! My sister kindly agreed to make the top tier cake (a caramel mud cake) to match my cupcakes – a selection of Brown sugar cupcakes with Salted Caramel filling and buttercream and Vanilla cupcakes filled with Lemon curd.

The majority of the cupcakes were made with normal flour, but I also made a batch of gluten free salted caramel cupcakes for a few guests and my sister and I who are gluten free.

In the end I have to say the best part of baking my own wedding cupcakes was being able to share my love for baking with our guests. It gave me great pleasure to see some guests devour not 1 but 2 cupcakes on the night although there weren’t any leftovers.

Gluten Free Chocolate Peanut Butter Cupcakes

These Gluten Free Chocolate Peanut Butter Cupcakes are quite simply to die for!!

I made them a few weeks ago when I got back from Poland. They were a special request from Jesse and at the time I was too jet lagged to even contemplate sharing them on my blog. After giving away a few of the cupcakes to work colleagues and sampling myself I realised they are just too good not to share!

Now you will probably read the recipe and think gee that is a lot of peanut butter! I promise you that it’s the perfect amount to balance out the richness of the cupcakes.
