On the weekend I was given the task of making a dessert to take to a family picnic. After making a few not so healthy treats lately, I was craving something a little healthier and this raspberry yoghurt loaf was the end result.
Made with low fat spreads and yoghurt the dessert didn’t disappoint in taste or texture. The fresh raspberries and lemon juice gave it an added punch of flavour and it was a perfect afternoon treat.
Added bonus, we came home with a few slices of cake as my sister made an amazing layered chocolate cake filled with salted caramel and honeycomb buttercream that was also gobbled up.

It’s a bit of a miracle that I found the time BUT I made this Gluten Free Spiced Maple Tea Cake this week! For those that follow me on Instagram, you will have seen 6 weeks ago today I gave birth to a precious baby girl Lyla. As I’m sure you could imagine everything has taken a back seat while I’ve been getting to know my daughter and settling back at home.
I’m slowly getting some free time now though, so along with much needed sleep I plan to get back to baking and sharing new recipes with you all. So today I’ve kick started my blog again by sharing this Gluten Free Spiced Maple Tea Cake.

After sharing my Lemon Meringue Layer Cake recipe with you all last week, I figured it was probably time I share a slightly healthier recipe with these Gluten Free Apricot Upside Down Cakes. But this doesn’t mean you lose out on taste!
These Apricot Upside Down Cakes are so simple to make and make a great treat for afternoon tea or dessert. In fact, this was the last thing I baked for my work colleagues before starting maternity leave last week.
Although I will be taking a break professionally, you will be pleased to know though that I’m not planning on taking a break from blogging. You might just have to forgive me if I’m a little quiet over the next month, as I will have just had my little one and be adjusting to my new role of full time mum.

Since moving house, it’s been a little crazy in our kitchen — but the good kind of crazy with the end result being this Gluten Free Lemon Meringue Layer Cake. Jesse requested a Lemon Meringue Layer Cake for his birthday. Although a week late (yes I’m a terrible wife) and a trip to the hardware store later for a blowtorch, I am super proud of how the cake turned out.
If you want to make a special cake for a loved one I would highly recommend this amazing cake! The cake is filled with two layers of lemon curd and is super fluffy. Oh but don’t worry you don’t have to go out and buy a blowtorch to make this lemon meringue cake. You can simply use the oven to brown the meringue.

Today I’m sharing this Gluten Free Madeira Cake recipe. Growing up I loved madeira cake. Though cakes were usually homemade in my house, I have fond memories of eating the supermarket kind that was lathered in thick orange icing.
I’m sure the ready made kind still exists at the supermarket, but I’m yet to find a gluten free version. Anyway, feeling nostalgic on the Australia Day long weekend I decided to make a gluten free version.
It went down a treat with my family, served for morning tea with a much needed coffee after a 2 hour drive to the beach.
