Gluten Free Mini Sticky Date Cakes

Monday night I decided I wanted to bake so I made these Gluten Free Mini Sticky Date Cakes!

I also decided to try an orange caramel sauce drizzled over the top compared to the more traditional sauce. It wasn’t as sweet as I sometimes find the traditional butterscotch/caramel sauce. So I managed the full cake + a scoop of vanilla ice cream just for good measure.

By Tuesday night I decided I needed Sticky Date Cake number 2. This time with the traditional sauce. Now the last mouthful was almost too much but you just can’t go past the traditional sauce. So here’s the recipe for the cakes with both types of sauce in case you feel like baking this week too.

Gluten Free Ginger White Chocolate Biscuits

I spent yesterday baking these Gluten Free Ginger White Chocolate Biscuits. They are one of my favourite biscuits (I love ginger) and always get me into the Christmas spirit.

While I haven’t had the chance to get organised for the festive season, leading up to Christmas all I can think about is food. Christmas pudding, Christmas cake, minced pies, gingerbread… yum! So in a few weeks time you can expect to see pictures of gingerbread (my favourite Christmas treat). For now, enjoy these Gluten Free Ginger White Chocolate Biscuits, I could honestly eat them all year!

Gluten Free Salted Caramel Pecan Cheesecake

A few weeks ago I put in a special birthday request for this Gluten Free Salted Caramel Pecan Cheesecake and my wonderful fiancé was kind enough to make it for me.

Initially I thought the pecans might have been a bit much but it really finished off the cake. I also think it might just be THE best cheesecake I have ever eaten… Although the Lemon Curd Cheesecake I baked for Jesse’s birthday comes in a close second.

Now I can’t take credit for baking this yummy cheesecake but I can share the recipe.

Banana and Raspberry Muffins Gluten Free

Over the past few weeks The Naughty Dietitian has been a little neglected but I’m back, and I’ve got some Gluten Free Banana and Raspberry Muffins to show you! I would love to say I was too busy baking to share recipes with you all but sadly I just haven’t had time.

Getting back into the kitchen this week though I decided it was probably time to bake something a little healthier. Now I’ve probably lost a few points for choosing a healthy option but these muffins really are tasty. Bonus for being low fat, low in added sugar and full of fruit and fibre.

Lemon Curd Cheesecake Gluten Free

Jesse celebrated his birthday Thursday and I decided I wanted to bake this Gluten Free Lemon Curd Cheesecake, but the original recipe was written entirely in Polish. Sometimes I like to do things the hard way!

Now most people would probably just look for a similar recipe in English, but I didn’t think of that. Instead I employed the help of Google Translate to convert the original recipe to English and modify it to be Gluten Free. After some luck and a few laughs I gave the recipe a shot and the cheesecake turned out really well. I even managed to finish a whole slice, which doesn’t normally happen as I often find the last few bites of cheesecake too much.

Anyway, in case you like cheesecake or lemon curd, or both – I thought I’d share my take on the recipe.
