Blackberry Jam Drop Biscuits - Gluten Free

I got back into the kitchen on the weekend and made these Gluten Free Blackberry Jam Drop Biscuits. Since returning from Queenstown, I have been so busy catching up with friends and family and starting the crazy job of planning a wedding that I have had so little time to bake or blog.

I’ve loved celebrating my recent engagement with everyone but I have really missed baking and writing on my blog. The original biscuit recipe was from my beautiful nan that I adapted it to be gluten free and include blackberry instead of raspberry jam.

Like most of my recipes you can make the biscuits with normal flour (gluten containing) by simply switching over the flours. You can also use any flavour of jam you want and they will still taste great. Or if you have more time you can always make your own jam to go with the recipe. I do usually like to make my own jam for this recipe but for now it had to be the store bought kind.

These Gluten Free Chocolate Peanut Butter Cupcakes are quite simply to die for!!

I made them a few weeks ago when I got back from Poland. They were a special request from Jesse and at the time I was too jet lagged to even contemplate sharing them on my blog. After giving away a few of the cupcakes to work colleagues and sampling myself I realised they are just too good not to share!

Now you will probably read the recipe and think gee that is a lot of peanut butter! I promise you that it’s the perfect amount to balance out the richness of the cupcakes.

Red Velvet Cheesecake Gluten Free

Now and then Jesse and I make a ridiculously delicious dessert like this Gluten Free Red Velvet Cheesecake.

Often we bake these crazy desserts for my family and the recipes always turn out nothing short of amazing. This Red Velvet Cheesecake was no exception and despite appearances and the long instructions below it is very simple to make! The cake is super fluffy and the cream cheese frosting just tops off the cake!

If you want to make a “gluten containing” version simply replace the gluten free flour for normal flour. Either way you’re guaranteed this cheesecake will taste fantastic!

Gluten Free Lemon Brownies

This past week I have been craving lemon flavoured baked treats which resulted in these Gluten Free Lemon Brownies. I blame Jesse (my partner) as he surprised me last weekend with my favourite dessert, Lemon Tart, and it was amazing.

So I decided to make yet another lemon flavoured treat, these lemon brownies and I’m sure glad I did. They’re biter size treats packed full of tangy lemon flavour and a lemon glaze to finish. Absolutely delicious!

Chocolate Coconut Balls Gluten Free

In my family these Gluten Free Chocolate Coconut Balls are known as “Nothings” but you might know these bite size treats as Rum Balls or Golf Balls? They only require 4 ingredients and don’t require any baking which always makes for a great recipe!

They are often made when my family get together to celebrate a Birthday or Christmas. The problem is they always seem to disappear from the table. So these days we make a separate batch for my brother so everyone else gets to enjoy them too!
