Today I’m sharing this Gluten Free Cherry Coconut Slice that I was planning to make but Jesse ended up baking for work. I’m sure I have mentioned it before but my husband loves to bake? It comes in handy, especially these days when Lyla often demands my attention halfway through baking something.

Anyway, it was one of those “Bring a plate to share” kind of work functions and it seems everyone loved it as there was none left! I was meaning to share it with you last week but we got caught up making brownies (my Walnut and White Chocolate Brownies) and Jesse’s Chocolate Ganache Macaron’s for a market on the weekend.

Peppermint Crisp Slice

Chocolate Peppermint Crisp Slice

This Peppermint Crisp Slice is a great example of how my taste buds have changed into adulthood! You see, growing up I was always more inclined to eat lollies than chocolate. At some point in my adulthood that changed. Probably when I met my chocolate loving husband.

While I like chocolate with caramel or honeycomb bits my all time favourite is peppermint chocolate. So I felt the need to create a peppermint slice with a little extra kick of peppermint. The end result was this peppermint crisp slice, which has a lovely bit of crunch and perfect ratio of chocolate to peppermint flavour.

Gluten Free Pecan Blondies

Gluten Free Pecan Blondies

This past weekend I baked these Gluten Free Pecan Blondies and after taste testing (as all good cooks do) I concluded these blondies are simply AMAZING. In fact, I caught my husband stealing two blondies out of the container before they were even photographed. That’s when you know you’re onto a winner!

I also came to the conclusion that blondies don’t get nearly enough attention compared to brownies and really ought to be baked more often. They have a similar texture to a brownie, but the cocoa base is substituted for a vanilla base. Hence the name “Blondie”.

I think thats enough from me today, but if you bake no other slice from my blog, I suggest bake these blondies!

Gluten Free Lemon Jelly Slice

Lemon Jelly Slice (Gluten Free)

This Gluten Free Jelly Slice has been on my bucket list to make for a while now. Believe it or not it was my first time making jelly slice let alone a gluten free version. So I finally got around to making it and it did not disappoint! My friends certainly enjoyed it on the weekend.

To mix things up a little I decided on lemon flavoured jelly instead of the standard raspberry flavour. This resulted in me eating 1/4 of the slice myself it was that good! It’s such a fresh tasting slice with very few ingredients. Truly a perfect treat for spring or summer.

P.S. I’ve tweaked the recipe a little and added extra gelatine to the middle lemon layer, as I noticed it didn’t quite set as desired when I made it. So if you decide to make the recipe, please let me know how you go and if I got it right second time around?

Gluten Free Berry Walnut Crumble Slice

I made this Gluten Free Berry Walnut Slice for dessert at a family dinner a few weeks ago and it was a BIG hit! My family were sneaking in third and fourth helpings it was that good!!

It’s packed full of mixed berries and walnuts and topped with a gluten free crumble that is just heavenly. The recipe is so simple and quick to make, you truly cannot go wrong. You can also serve it in small or larger squares depending on how many guests you’re sharing it with.
