I made this Gluten Free Berry Walnut Slice for dessert at a family dinner a few weeks ago and it was a BIG hit! My family were sneaking in third and fourth helpings it was that good!!
It’s packed full of mixed berries and walnuts and topped with a gluten free crumble that is just heavenly. The recipe is so simple and quick to make, you truly cannot go wrong. You can also serve it in small or larger squares depending on how many guests you’re sharing it with.

- 150 g butter, softened
- ⅔ cup icing sugar
- 1¾ cups gluten free plain flour
- ½ teaspoon ground cinnamon
- ½ cup (60g) ground walnuts
- 300 g mixed frozen berries (strawberries, raspberries and blueberries)
Preheat oven to 180℃ and line a 18 x 28cm rectangular lamington slice pan with baking paper.
Using the stand mixer fitted with the paddle attachment, beat the butter and sifted icing sugar on medium speed until light and fluffy.
- Stir in sifted flour, cinnamon and walnuts until the mixture is crumbly.
Reserve 1 cup of the crumble walnut mixture. Press the remaining crumble mixture into the pan and top with frozen berries before sprinkling the reserved crumble mixture over the top.
Bake for approximately 40 minutes then cool in tray before cutting into desired size squares.
