Today’s new recipe is Gluten Free Rocky Road! It’s such a fun and easy slice to make and perfect for party season!!
I created more of a traditional rocky road slice using marshmallows, peanuts and coconut, but you can adapt this quick and easy recipe to include any ingredients. I’ve seen some recipes with pistachios, turkish delight or even white chocolate. Just remember to double check the confectionery you plan to use is gluten free if you plan to make a GF version.

- 500 g milk chocolate, chopped
- 150 g Gluten free red jube lollies (I used Haribo Berrymania lollies GF at time of purchase)
- 140 g Gluten free marshmallows, chopped into quarters
- ½ cup (70g) crushed peanuts
- ¼ cup (23g) desiccated coconut
Line a lamington tray 18 x 18cm with baking paper. Place the chocolate in a large heatproof bowl. Melt the chocolate using a microwave, approximately 1 minute on high. (This will vary depending on the strength of your microwave).
Add the remaining ingredients to the melted chocolate and combine until the ingredients are coated in chocolate. Then immediately pour the mixture into the lamington tray. Use a wooden spoon or spatula to spread the mixture out evenly and top with a few remaining peanuts, cube lollies and marshmallows as desired for decoration.
Transfer to the rocky road slice to the refrigerator to set before cutting into bite size squares using a warm knife.

I have been looking for one that was safe, so I can use this nice recipe and omit the peanuts. Any product that has a bread like consistency wakes me up at night with a coughing fit. Glad to have come across this, as all search give biscuits or cookies in the recipe.
What milk chocolate did you use? Cadbury have may contain gluten and im struggling to find an alternative
Hi Janette, thank you for your question. I’m not sure where you are located and if you have access to this product but I generally use Callebaut milk chocolate which is gluten free. Nestle’s milk chocolate melts was also gluten free when I last checked and might be an option for you.
