This past week called for a new summer dessert, this Gluten Free Mango Macadamia Ice Cream Bar. Filled with fresh mango and a tasty macadamia and ginger based biscuit top, this ice cream bar looks almost like an upside down cheesecake. What’s even better it doesn’t require churning or an ice cream maker!
This dessert is something I have been wanting to try for a while so I thought I’d take the opportunity while mangoes were cheap. It tastes just divine and easily serves 10 people!

Today I’m sharing this Gluten Free Madeira Cake recipe. Growing up I loved madeira cake. Though cakes were usually homemade in my house, I have fond memories of eating the supermarket kind that was lathered in thick orange icing.
I’m sure the ready made kind still exists at the supermarket, but I’m yet to find a gluten free version. Anyway, feeling nostalgic on the Australia Day long weekend I decided to make a gluten free version.
It went down a treat with my family, served for morning tea with a much needed coffee after a 2 hour drive to the beach.

Last week I had the urge to bake some new treats, but I didn’t have a lot of time so I decided on this Gluten Free Coconut Ice Slice. It only took 45 minutes to make from start to finish and has a great balance of flavour with the coconut ice topping and biscuit base.
