Reese's Peanut Butter Cookies Gluten Free

You can blame my husband for these Gluten Free Reese’s Peanut Butter Cookies. They are filled with Reese’s pieces, Reese’s peanut butter chips and chocolate chips. Yum!

They’re my 7th peanut butter related recipe on the blog but hey who’s counting? On a more serious note, I love baking biscuits as they are so quick and easy to make. I also love that you you get to eat them almost straight away. Talk about instant satisfaction!

Reese's Peanut Butter Cookies Gluten Free

Servings: 24 large biscuits
Ingredients
  • 125 g butter, softened
  • ½ cup brown sugar
  • ½ cup caster sugar
  • 1 tsp vanilla extract
  • cup gluten free self raising flour
  • 86 g Reese's pieces
  • ½ cup chocolate chips
  • ½ cup peanut butter chips
Instructions
  1. Preheat oven to 180°C and line two baking trays with baking paper.

  2. Using a stand mixer with the paddle attachment, cream the butter and sugar. Then add the vanilla extract and egg and mix until combined.


  3. Add in the flour, ½ the Reese's pieces, all the chocolate chips and peanut butter chips and mix using a wooden spoon until combined.


  4. Roll 1 heaped tablespoon of biscuit mixture into balls and flatten slightly with the palm of your hand before pressing the remaining Reese's pieces into the tops of the biscuits as desired. Cook for 10-12 minutes or until golden brown.


  5. Cool on the tray for 5 minutes before transferring to a wire rack to completely cool.
