Mini Gingerbread Cake Gluten Free

I finally got my act together last week and not only made this Gluten Free Mini Gingerbread Cake for an early Christmas dinner with my Mother in Law, but I got a photo of it too so I could prove it existed!

The cake tasted divine (I love gingerbread spices) and it was really quick to decorate if you’re time poor like me these days. If you get the chance to bake it please let me know your thoughts.

I have to say over the past 3 months life got the better of me and my blog. I had every intention of sharing a handful of new recipes including Lyla’s epic first birthday cake, but truthfully, I had other priorities. Anyway I am back now and wish you all a very Merry Christmas!

Rolo No Bake Cheesecake Gluten Free

Feeling refreshed after my holiday to New Zealand I was back in the kitchen on the weekend to bake this Gluten Free Rolo No Bake Cheesecake for Jesse’s birthday!

As always I’d asked Jesse to think about what type of cake he wanted and he decided on a cheesecake but wasn’t specific about flavour. After a search through my Pinterest account, I sent a selection for him to choose from, and this year he chose a Rolo No Bake Cheesecake.

Nestle chocolate Rolo’s aren’t easy to find in Australia, so I used the Rolo chocolate you buy in a block and left the individual Rolo chocolates I managed to find for decoration only. The end result was amazing and we may have eaten it three nights in a row…

Thanks to Jane’s Patisserie for the original recipe which I then modified to be gluten free with homemade caramel and Rolo chocolate in a block. Feel free to head over to my Instagram account if you want to see a few pics from our holiday or a recap of the last 3 birthday cakes I made Jesse.

Peach and Almond Tea Cake Gluten Free

Over Easter I was on a mission to perfect gluten free hot cross buns but I failed. I tried a handful of new recipes and whilst they all tasted great I still wasn’t satisfied with the texture. They all just ended up too dense and lacking the light fluffy texture of normal gluten containing ones. Better luck next year I hope!

I also made a delicious spiced honey swiss roll for our family lunch on Easter Sunday, but sadly I didn’t get the chance to take a photo before it was devoured.

So… fast forward a month (wow time has just flown by) and here we are finally with a new recipe! This cake tastes great, is super easy to make (like most of my recipes) and it’s a delightful twist on the common orange & almond cake often available for gluten free folk in cafes, restaurants etc.

Chocolate Torte Gluten Free

When friends request a cake recipe they can make that is gluten free, I suggest this Chocolate Torte. It’s both easy to make and tastes heavenly.

It’s a recipe I’ve made several times yet I hadn’t yet shared on my blog. So I used a mother group catch up as the perfect excuse to make it again and share on The Naughty Dietitian.

Sadly I can’t claim the original recipe as mine (Thank you Williams-Sonoma). I did however make a few small changes to the recipe to make it a little quicker to make and adapted it to be gluten free.

Raspberry Yoghurt Loaf with Cream Cheese Icing Gluten Free

On the weekend I was given the task of making a dessert to take to a family picnic. After making a few not so healthy treats lately, I was craving something a little healthier and this raspberry yoghurt loaf was the end result.

Made with low fat spreads and yoghurt the dessert didn’t disappoint in taste or texture. The fresh raspberries and lemon juice gave it an added punch of flavour and it was a perfect afternoon treat.

Added bonus, we came home with a few slices of cake as my sister made an amazing layered chocolate cake filled with salted caramel and honeycomb buttercream that was also gobbled up.
