Salted Caramel Chocolate Tart Gluten Free

Salted Caramel Chocolate Tart Gluten Free

What better way to get back into baking than with this Gluten Free Salted Caramel Chocolate Tart! It was really therapeutic being able to do something I love, even though I needed some help with baking (I’ll be limited with moving for some time yet following my back surgeries).

If you want to impress friends over dessert I’d highly recommend you make this tart! It’s seriously restaurant worthy, but quite rich so you only need a small slice.

Thanks to the Life Made Simple Blog for the original recipe that slightly modified to be gluten free and to my husband for helping me in the kitchen as always.

Gluten Free Rolo No Bake Cheesecake

Rolo No Bake Cheesecake Gluten Free

Feeling refreshed after my holiday to New Zealand I was back in the kitchen on the weekend to bake this Gluten Free Rolo No Bake Cheesecake for Jesse’s birthday!

As always I’d asked Jesse to think about what type of cake he wanted and he decided on a cheesecake but wasn’t specific about flavour. After a search through my Pinterest account, I sent a selection for him to choose from, and this year he chose a Rolo No Bake Cheesecake.

Nestle chocolate Rolo’s aren’t easy to find in Australia, so I used the Rolo chocolate you buy in a block and left the individual Rolo chocolates I managed to find for decoration only. The end result was amazing and we may have eaten it three nights in a row…

Thanks to Jane’s Patisserie for the original recipe which I then modified to be gluten free with homemade caramel and Rolo chocolate in a block. Feel free to head over to my Instagram account if you want to see a few pics from our holiday or a recap of the last 3 birthday cakes I made Jesse.

P.S. It’s starting to get to the busy end of the year with multiple birthdays, catch ups with friends, the racing carnival and christmas parties coming up. This means there is a lot of baking ahead for me and I can’t wait to share it all with you!

Happy Wednesday!
The Naughty Dietitian,

Caramel Shortbread Biscuits Gluten Free

Caramel Shortbread Biscuits Gluten Free

All I seem to be baking at the moment is biscuits, including these Gluten Free Caramel Shortbread Biscuits! I think it’s partly due to the weather (I love a good biscuit with my cup of tea) and the fact that they’re pretty quick to make.

These biscuits are no exception! Quick to make and truly delicious. In fact, the shortbread is probably the best I have tasted. It melts in your mouth. Then add the caramel to the mix and they are heavenly. I’d love to hear if you make them or have a biscuit recipe you think I ought to try?

Orgran’s Caramel Fudge Brownies Gluten Free

Orgran's Caramel Fudge Brownies Gluten Free

Growing up it was rare to have a packet mix cake or muffins in our house. Both my mum and grandmother were whizzes in the kitchen and the reason why I love baking.

Living in such a fast paced society, I realise not everyone has the luxury of time or motivation to bake from scratch though. So with a growing range of gluten free packet mixes available in the supermarket, I’ve decided to have a go at baking and reviewing a packet mix product.

For my first review, I chose to bake Orgran’s Caramel Fudge Brownie Mix having eyed off the product in the supermarket for a few months. Rather than providing you with the recipe, I thought I would talk about the pros and cons of the product, but please know I have not received any form of payment or sponsorship for my product review.

Pros for Orgran’s Caramel Fudge Brownies
– Only 2 ingredients required from your pantry (eggs & butter)
– Easy recipe: simply whisk together all ingredients in one bowl
– Takes 10 minutes to prepare
– Bakes in 15-20 minutes
– The caramel flavour is spot on
– Lasts for 4 days without going dry

Cons for Orgran’s Caramel Fudge Brownies
– The caramel fudge bits are too small for my liking
– Could pass for cake more than a dense brownie

Finally, would I bake these brownies again? Yes I would.

Gluten Free Twix Biscuits

Gluten Free Twix Biscuits

These Gluten Free Twix Biscuits are a genius idea! They’re a shortbread biscuit topped with caramel and chocolate. Whilst I would like to take credit for the original “twix” cookie idea, I have to thank Pinterest for that.

I also have to thank my husband for making an excess amount of caramel (for another baking project) that just so happened to be free to use for these Gluten Free Twix Biscuits. He tells me the caramel recipe he used was a little time consuming so to save time I’ve suggested ready made caramel from the supermarket for these biscuits. They will be sure to taste just as good!
