Today I’m sharing my Gluten Free Chocolate Ripple Cheesecake that I made for Valentines Day. I’ve shared a few crazy cheesecake recipes in the past so thought I’d try for a more traditional option and I think I have succeeded.
This cheesecake is sooo good. A delicious and super easy cheesecake thats not too rich and packed with my own Gluten Free version of the Arnott’s Choc Ripple Biscuits. For the Aussies out there, you will know what Arnott’s biscuits are and just how many desserts call for Arnott’s biscuits. So I was stoked when I managed to create a recipe that was quite similar. If you’re not familiar with this type of biscuit, it’s a plain chocolate biscuit that is used as a staple in many desserts.
I originally posted my gluten free version of the Choc Ripple biscuits as part of a dessert from my childhood called peppermint log. I don’t think I really advertised just how similar the biscuits are to the normal gluten containing kind and I’ve never posted the recipe separately. So you might want to print this recipe for safe keeping!
Another Australia Day has come and gone, and to celebrate I made this no churn Gluten Free Lamington Ice Cream! It’s ridiculously easy to make, with the most time consuming step involving making gluten free sponge cake for the recipe. I used my lamington sponge cake recipe but you could also use a gluten free packet vanilla cake mix if you’re short on time!
This year I wanted to make something a little different, and given the Summer heat in Melbourne, what better option than ice cream! For something a little different you could even add raspberry jam?

If you enjoy peppermint chocolate you will LOVE this Gluten Free Peppermint Slice! If you haven’t already, you need to add peppermint slice to your repertoire of baked goods. Though I’m probably a little biased as peppermint chocolate is my second favourite (behind caramel chocolate of course).

These Gluten Free Melting Moments bring back so many memories from my childhood! Back then I only knew these biscuits as “Yo Yos” thanks to my beloved Nan and Mum. Nan would always get so cross when she went to bake a batch and I had eaten half the raw mixture already from the fridge (oops).
Back in the day, these biscuits were made with a traditional lemon icing and regular flour and feature as part of food stalls at school fetes, a country Sunday market called “Trash & Treasure” and to raise money for various charities/organisations. So I thought it was about time I make a “Gluten Free Yo Yo” and try a variation with Chocolate Buttercream instead. I’ve also included a Lemon Buttercream in case you prefer the more traditional melting moment. Both are YUM.
To say December has been a ridiculous month is an understatement… but today I’m finally getting the chance to share my recipe for Gluten Free White Chocolate Ginger Snap Biscuits!
As most of you probably know by now, I love ginger flavoured baked treats! So when I had the chance to make something for a friend’s Christmas party, these Ginger Snap Biscuits came to mind! After all, who wouldn’t love biscuits dipped in chocolate? They are super easy to make and absolutely delicious.
I’m hoping to share at least one more recipe with you all before the BIG day, but I won’t make any promises in case any other challenges are thrown at me over the next few days. Amongst the normal chaos of December with Birthdays and several Christmas parties to attend, we’ve had some super fun plumbing issues and multiple days of flooding under our house that no one seems able to fix. Luckily the plumbing issue was quickly rectified and flooding hasn’t caused any damage, phew!
Hopefully everyone else has had a more positive December? I for one am extremely excited for a New Year ahead!!
