Chocolate Chip Cashew Biscuits - Gluten Free

These Gluten Free Chocolate Chip Cashew Biscuits are ridiculously tasty. If you like biscuits, you need to do yourself a favour and make them! Made using burnt butter and packed with dark chocolate chips and cashews, they’re a great treat to go with your morning coffee or cup of tea. You can also substitute the cashews for other nuts if you don’t have any cashews in the house.

The original recipe comes from a favourite food blog of mine, Cookies and Cups. I modified the recipe to be Gluten Free and for my own taste preferences/ease of cooking.

Gluten Free Chocolate Almond Fudge Cake

Sunday night I baked this Gluten Free Chocolate Almond Fudge Cake and it was yum! The cake has a delicious fudge centre and like the majority of recipes I share, it was super easy to make! I can’t take credit for this recipe though, as the original recipe came from a Coles magazine.

Sharing a new recipe each week often means I’m spending my spare time in the kitchen (which you all know I LOVE). A new recipe every week also means I have an abundance of sweets in the house, unless I gift the recipe to loved ones. But I don’t have any shame in sharing with you all that I regularly eat treats. As a Dietitian I’m all about a balanced diet, where “diet” means everyday eating. I eat plenty of fruit, wholegrains and vegetables and exercise regularly. But more importantly I eat what I feel like, when I feel like it and thoroughly enjoy it. I’ll only ever encourage avoiding certain foods if medically necessary.

Next week I’m attending a Christmas in July dinner with work, so I decided I would get into the into the Christmas spirit a little early and bake this Gluten Free Spiced Chocolate Fruit Cake.

I feel like most people either love or hate fruit cake. Do you agree? I for one LOVE fruit cake and think it deserves to be eaten a few times a year rather than just at Christmas time! So with that being said, I decided to add chocolate to the mix. The chocolate flavour is subtle but makes this cake so so good. I will definitely be making it again at Christmas!

Gluten Free Chocolate Cinnamon Bread

I decided to bake this Gluten Free Chocolate Cinnamon Bread at the last minute on Sunday. I had every intention of making another chocolate inspired recipe, but realised I was missing an essential cooking utensil at a friend’s house. Do you ever have one of those days in the kitchen? I also attempted one of my old recipes, but somehow managed to make a mess of it!

Thankfully, this recipe saved the day, being both simple to make and tasting delicious. It’s not too rich or extravagant, comes out moist and is perfect for sharing with a cup of tea as your morning or afternoon treat.

In other news, I shared an updated photo of my Linzer Cookies on Instagram Tuesday. Did you see the post or picture? I’ve fallen in love with that photo. That probably sounds odd to some? But it’s been nice (and embarrassing at times) to see how much my food styling and Jesse’s photography skills have improved these past 6-12 months.

These Gluten Free Peanut Butter White Chocolate Blondies are the perfect treat for morning or afternoon tea this Mother’s Day!

They’re super quick to make, taste heavenly and only require one bowl for mixing, so what’s not to love? If you’re looking to impress your Mum with something a little different I’d also highly recommend my Lemon Curd Cheesecake or Pecan Blondies. Yum!

Although I don’t get the chance to celebrate with Mum this weekend, I’ll be sending her these treats to enjoy while she’s busy creating floral arrangements for all the other Mums out there to enjoy.
