Dark Chocolate Cranberry Florentines Gluten Free

These Gluten Free Dark Chocolate Cranberry Florentines are such a special treat filled with dried cranberries, a thin layer of dark chocolate and an abundance of nuts. They’re perfect with your cup of coffee or tea.

If you’ve always wanted to try baking florentines or learning to temper chocolate, I encourage you to give them a go. They are definitely worth the effort and are not that difficult to make.

Special thanks to Kirsten Tibballs who taught me how to temper chocolate with her youtube video on tempering chocolate. The original florentine recipe was also from her “Chocolate” cookbook. I just modified it slightly to suit my own taste preferences.

Salted Chocolate Fudge Gluten Free

Todays recipe is this Gluten Free Salted Chocolate Fudge.

Last year I gave my husband a copy of Kirsten Tibballs’ “Chocolate” cookbook. The book was a birthday gift and five months later I can finally say we’ve put it to use, following her chocolate fudge recipe to make this Salted Chocolate Fudge.

Luckily the recipe was gluten free, as the fudge is simply to die for! The salt flakes were a last minute addition and give the fudge that lovely salty but sweet kick. Please note, a candy thermometer and a spare pair of hands are beneficial for this recipe to go smoothly.

Gluten Free Chocolate Lamingtons

Chocolate Lamingtons have always been on my “to bake gluten free” bucket list. So what better time to test out baking these Gluten Free Chocolate Lamingtons with Australia Day next week.

I really enjoy Australia Day. We go on a road trip to a different beach each year and get to spend the day hanging out with my family. For those that don’t know much about me, I have one brother and three sisters. I’m the youngest of the family with two nieces and two nephews. I adore them all so much and love that Lyla has so many aunties, uncles and cousins to play with and protect her in this crazy world.

Anyway, getting back to the baking – these chocolate lamingtons are really tasty and quick to make. You can slice them in half and add a little jam or cream if you fancy. If you’re really after something different, you can also try making my lime lamingtons. They’re filled with lime curd and are ridiculously good, but then again, I’m a sucker for anything with lime or lemon curd.

Chocolate Pistachio Hedgehog Slice Gluten Free

To celebrate the new year I’m sharing this incredible Gluten Free Chocolate Pistachio Hedgehog Slice! This hedgehog slice is seriously cafe quality and a MUST bake for any hedgehog lover. It contains delectable dark chocolate and that perfect nutty pistachio flavour. I plan on gifting it tonight to our neighbours to wish them a Happy New Year! They generously gave us a gorgeous box of hand selected Koko Black Chocolates for Christmas. I must say they have exceptional taste when it comes to chocolate, so I hope they like this slice.

Reflecting on the past few months of blogging (or lack of in my case…), I’ve decided my goal for 2017 is to bake and blog weekly. I know it’s a big goal to bake & blog regularly, amongst caring for a toddler, myself and heading back to work part time. But I love baking and sharing recipes with you all.

Cherry Coconut Slice Gluten Free

Today I’m sharing this Gluten Free Cherry Coconut Slice that I was planning to make but Jesse ended up baking for work. I’m sure I have mentioned it before but my husband loves to bake? It comes in handy, especially these days when Lyla often demands my attention halfway through baking something.

Anyway, it was one of those “Bring a plate to share” kind of work functions and it seems everyone loved it as there was none left! I was meaning to share it with you last week but we got caught up making brownies (my Walnut and White Chocolate Brownies) and Jesse’s Chocolate Ganache Macaron’s for a market on the weekend.
