Gluten Free Linzer Cookies

Today I’m sharing these Gluten Free Linzer Cookies. Growing up one of my favourite biscuits were “Jam Fancies” or “Jam Francies” as we liked to call them in my house. Two shortbread biscuits sandwiched with jam filling, also known as “Linzer Cookies”.

Whilst jam fancies weren’t an everyday item in the kitchen cupboard, I can still remember how delicious they tasted. So much so, I’ve been craving a gluten free version ever since!

So when I stopped by a homewares store a few months back I was super excited to find Linzer cookie cutters, and this past weekend I finally crossed gluten free jam fancies off my to bake list.

Now after taste testing I can honestly say with 100% confidence that these cookies taste exactly like jam fancies, maybe even better?!

Today I’m sharing these Gluten Free Peanut Butter Cookies. As one peanut butter cookie recipe is never enough I’ve also made flourless peanut butter & chocolate chip cookies and chocolate peanut butter cookies.

If you prefer crunchy biscuits though, these are the ones for you! They also have double the peanut butter flavour so perfect for real peanut butter addicts!

A few weeks ago I made these Gluten Free Chocolate Chunk Raspberry biscuits. They were unlike any other biscuit I had baked containing the raspberries. Despite the name they were also super soft which I love in a biscuit. You simply can’t go with chocolate biscuits too!

Chocolate Peanut Butter Cookies Gluten Free

Today I’m sharing these Gluten Free Chocolate Peanut Butter Chip Cookies. If you have followed my blog for a while you are probably aware I love to cook with peanut butter. I have shared my recipes for peanut butter chocolate brownies, peanut butter cupcakes and flourless peanut butter cookies with chocolate chips. So it should come as no surprise that I would visit the Hersheys store in Times Square, New York on my honeymoon and bring home Reese’s peanut butter chips to use for baking.

Now that I’ve been back home just over a month and wishing I could still be on my honeymoon (or any holiday for that matter), I thought it would be a nice treat to make some chocolate cookies with these yummy peanut butter chips.

It was the perfect way to end the weekend.

Gluten Free Anzac Biscuits

Today I wanted to share these Gluten Free Anzac Biscuits with you. They’re the first thing I have baked since arriving home from my wedding and honeymoon! It’s better late than never right?

Anzacs have always been something I’ve missed on my gluten free diet. Mum used to make them all the time growing up. So with Anzac Day on Friday and no baked goods in the house I knew it was time I gave this gluten free recipe a go – and they didn’t disappoint!
