Chocolate Gingerbread Men Gluten Free

Chocolate Gingerbread Men Gluten Free

This week Jesse and I made an army of these Gluten Free Chocolate Gingerbread Men for a Christmas present.

I love giving family and friends baked goods for Christmas and this chocolate gingerbread recipe is our favourite so it’s a perfect gift.  I had a ball decorating the gingerbread men cut outs – especially the ones with a leg or head missing. The cutouts were gifted to Jesse last Christmas.

We also made Christmas bark for the first time (a white choc version with strawberry candy canes pictured above). I might share that next time.

Gluten Free Ginger White Chocolate Biscuits

Gluten Free Ginger White Chocolate Biscuits

I spent yesterday baking these Gluten Free Ginger White Chocolate Biscuits. They are one of my favourite biscuits (I love ginger) and always get me into the Christmas spirit.

While I haven’t had the chance to get organised for the festive season, leading up to Christmas all I can think about is food. Christmas pudding, Christmas cake, minced pies, gingerbread… yum! So in a few weeks time you can expect to see pictures of gingerbread (my favourite Christmas treat). For now, enjoy these Gluten Free Ginger White Chocolate Biscuits, I could honestly eat them all year!

Let me know if you like them!

Blackberry Jam Drop Biscuits Gluten Free

Blackberry Jam Drop Biscuits - Gluten Free

I got back into the kitchen on the weekend and made these Gluten Free Blackberry Jam Drop Biscuits. Since returning from Queenstown, I have been so busy catching up with friends and family and starting the crazy job of planning a wedding that I have had so little time to bake or blog.

I’ve loved celebrating my recent engagement with everyone but I have really missed baking and writing on my blog. The original biscuit recipe was from my beautiful nan that I adapted it to be gluten free and include blackberry instead of raspberry jam.

Like most of my recipes you can make the biscuits with normal flour (gluten containing) by simply switching over the flours. You can also use any flavour of jam you want and they will still taste great. Or if you have more time you can always make your own jam to go with the recipe. I do usually like to make my own jam for this recipe but for now it had to be the store bought kind.

Thanks for reading!

Flourless Peanut Butter Choc Chip Biscuits

Flourless Peanut Butter Choc Chip Biscuits

About 2 years ago I rediscovered my love for peanut butter and baking every peanut butter recipe I can get my hands on, including these amazing Flourless Peanut Butter Choc Chip Biscuits.

Peanut butter and honey on toast remains my all time favourite way to eat peanut butter but these Peanut Butter Choc Chip Biscuits come in as a very close second. They only require 5 ingredients with the recipe taking less than 30 minutes to make from start to finish! If you’re looking for something quick to whip up before guests come over, they are the perfect treat. Quick to make and super tasty.

Hope you enjoy them as much as I do!
