Gluten Free Blueberry Pie

On Monday night, I had the desire to bake this Gluten Free Blueberry Pie. We purchased a bag of frozen blueberries a few weeks ago when they were on special, and what better way to use them than to make pie? I’d never baked or tasted blueberry pie before, so it seemed like the perfect opportunity to do so.

The end result was this heavenly pie, with a beautiful flaky crust and blueberry filling, with a hint of cinnamon to taste. A truly great dessert for a cold wintry night. If blueberries aren’t your thing you might like a few of my other pies such as Key Lime Pie, Pumpkin Pie or Apple Pie with Cinnamon Crumble.

This recipe also marks the occasion of my 100th blog post! I’m super excited to have achieved this, given it’s just a side hobby amongst raising a toddler and working part time. I started out blogging as an escape from my full time job as a Dietitian. Now it’s almost a part time job in itself and I absolutely love it! I love sharing gluten free recipes that everyone can enjoy. I share both my own recipes and recipes from well known authors that I’ve modified to be gluten free. This recipe for example, comes from the Williams-Sonoma Pie & Tart recipe book that I modified to be gluten free and for my own taste preferences.

So, I just wanted to take a moment to say thank you to everyone who’s been following along on my journey thus far. I hope you continue to read my posts and bake my recipes. I get great satisfaction in people enjoying my food.

Gluten Free Banana Puddings with Butterscotch Sauce

The winter weather has arrived in Melbourne which means it’s time for pudding, this Gluten Free Banana Puddings with Butterscotch sauce to be exact! These gluten free puddings are a great dessert to share with friends or just because you like bananas.

Like a lot of my recipes, you can easily substitute the gluten free flour for normal flour if you don’t need to follow a gluten free diet. Be sure to warm the puddings up and serve with a scoop of ice cream. If you run out of ice cream, a dollop of cream also goes nicely.

Salted Caramel Chocolate Tart Gluten Free

What better way to get back into baking than with this Gluten Free Salted Caramel Chocolate Tart! It was really therapeutic being able to do something I love, even though I needed some help with baking (I’ll be limited with moving for some time yet following my back surgeries).

If you want to impress friends over dessert I’d highly recommend you make this tart! It’s seriously restaurant worthy, but quite rich so you only need a small slice.

Gluten Free Cherry Pie

I was so grateful for a slice of this Gluten Free Cherry Pie Sunday night! It brought comfort to Jesse and I after a rough weekend with our little girl who was fairly unwell. Thankfully Lyla is now a lot better so I’m no longer on the hunt for comfort food.

If you’re in need of a little comfort though? This Gluten Free Cherry Pie complete with vanilla ice cream will surely do the trick. It’s a nice change from the Apple Pie or Strawberry Rhubarb Pie I usually bake.

Gluten Free Key Lime Pie

Gluten Free Key Lime Pie

While the limes were still cheap I decided to bake this Gluten Free Key Lime Pie. It’s a recipe I’ve made before but I made it again for my brother in law’s birthday and it’s too awesome not to share with you all!

It’s a great dessert. It verges on the texture of a cheesecake with a lovely tart flavour and such a great chewy pie crust made of cookie crumbs. The recipe is so simple to make. You’re guaranteed to love it! If you prefer a more traditional pie you might like my Strawberry Rhubarb Pie or Maple Pecan Pie.
