Chocolate Pistachio Hedgehog Slice Gluten Free

To celebrate the new year I’m sharing this incredible Gluten Free Chocolate Pistachio Hedgehog Slice! This hedgehog slice is seriously cafe quality and a MUST bake for any hedgehog lover. It contains delectable dark chocolate and that perfect nutty pistachio flavour. I plan on gifting it tonight to our neighbours to wish them a Happy New Year! They generously gave us a gorgeous box of hand selected Koko Black Chocolates for Christmas. I must say they have exceptional taste when it comes to chocolate, so I hope they like this slice.

Reflecting on the past few months of blogging (or lack of in my case…), I’ve decided my goal for 2017 is to bake and blog weekly. I know it’s a big goal to bake & blog regularly, amongst caring for a toddler, myself and heading back to work part time. But I love baking and sharing recipes with you all.

Gluten Free Rolo No Bake Cheesecake

Rolo No Bake Cheesecake Gluten Free

Feeling refreshed after my holiday to New Zealand I was back in the kitchen on the weekend to bake this Gluten Free Rolo No Bake Cheesecake for Jesse’s birthday!

As always I’d asked Jesse to think about what type of cake he wanted and he decided on a cheesecake but wasn’t specific about flavour. After a search through my Pinterest account, I sent a selection for him to choose from, and this year he chose a Rolo No Bake Cheesecake.

Nestle chocolate Rolo’s aren’t easy to find in Australia, so I used the Rolo chocolate you buy in a block and left the individual Rolo chocolates I managed to find for decoration only. The end result was amazing and we may have eaten it three nights in a row…

Thanks to Jane’s Patisserie for the original recipe which I then modified to be gluten free with homemade caramel and Rolo chocolate in a block. Feel free to head over to my Instagram account if you want to see a few pics from our holiday or a recap of the last 3 birthday cakes I made Jesse.

Nut Butter Balls (Gluten Free)

If you’re a serious peanut butter fan, you will love these no bake Gluten Free Nut Butter Balls!

I was experimenting with a new recipe following my success with the Orange Cacao Balls I made a few weeks back. Whilst I can’t claim they are as healthy as the orange cacao balls, they certainly taste just as good.

Filled with peanut & almond butter, walnuts, dates, cocoa/cacao powder, a splash of chia seeds and small amount of biscuits (for the crunch factor) they bring together that rich nut taste.

A worthy afternoon treat and slightly healthier than eating peanut butter straight from the jar…

Orange Cacao Balls (Gluten Free)

Over the last few weeks I’ve noticed a theme with my recipes containing citrus or summer fruit, including these Gluten Free Orange Cacao Bliss Balls. Think it’s the warm weather inspiring me but either way, these orange cacao balls have been a great new addition to morning/afternoon tea.

The fresh orange juice and zest is a refreshing twist to the standard coconut and cacao flavour and they really hit the spot when craving something sweet! Added bonus these orange cacao bliss balls are packed full of healthy ingredients.

Guess I can’t hide the dietitian in me all the time and occasionally like to share a healthier recipe with you all. Don’t hold it against me.
