Gluten Free Blueberry Pie

Gluten Free Blueberry Pie

On Monday night, I had the desire to bake this Gluten Free Blueberry Pie. We purchased a bag of frozen blueberries a few weeks ago when they were on special, and what better way to use them than to make pie? I’d never baked or tasted blueberry pie before, so it seemed like the perfect opportunity to do so.

The end result was this heavenly pie, with a beautiful flaky crust and blueberry filling, with a hint of cinnamon to taste. A truly great dessert for a cold wintry night. If blueberries aren’t your thing you might like a few of my other pies such as Key Lime Pie, Pumpkin Pie or Apple Pie with Cinnamon Crumble.

This recipe also marks the occasion of my 100th blog post! I’m super excited to have achieved this, given it’s just a side hobby amongst raising a toddler and working part time. I started out blogging as an escape from my full time job as a Dietitian. Now it’s almost a part time job in itself and I absolutely love it! I love sharing gluten free recipes that everyone can enjoy. I share both my own recipes and recipes from well known authors that I’ve modified to be gluten free. This recipe for example, comes from the Williams-Sonoma Pie & Tart recipe book that I modified to be gluten free and for my own taste preferences.

So, I just wanted to take a moment to say thank you to everyone who’s been following along on my journey thus far. I hope you continue to read my posts and bake my recipes. I get great satisfaction in people enjoying my food.

Love,
Amanda

Gluten Free Cherry Pie

Gluten Free Cherry Pie

I was so grateful for a slice of this Gluten Free Cherry Pie Sunday night! It brought comfort to Jesse and I after a rough weekend with our little girl who was fairly unwell. Thankfully Lyla is now a lot better so I’m no longer on the hunt for comfort food.

If you’re in need of a little comfort though? This Gluten Free Cherry Pie complete with vanilla ice cream will surely do the trick. It’s a nice change from the Apple Pie or Strawberry Rhubarb Pie I usually bake.

Hope you’re all well and having a great week so far. Don’t forget to get in touch if you make this recipe. I’d love to hear your thoughts. P.S Head over to my instagram account for a look at the Cherry Pie before it went in the oven. I’ve been working on my pie decorating skills!

Gluten Free Lemon Meringue Pie

Lemon Meringue Pie Gluten Free

Wow, it’s been a while since I’ve blogged but I’m back with this yummy Gluten Free Lemon Meringue Pie so I’m sure all is forgiven?!

If you couldn’t already tell based on past recipes I LOVE lemon curd. So when my sister gifted us some lemons from their lemon tree it didn’t take long to decide on making this pie. Let me know if you get the time to bake this one, it won’t disappoint!

Apple Pie with Cinnamon Crumble Gluten Free

Apple Pie with Cinnamon Crumble (Gluten Free)

Today I’m sharing this Gluten Free Apple Pie with Cinnamon Crumble courtesy of our new oven.

A few weeks ago Jesse and I moved into our new home which was a little bit exciting! Naturally we were keen to test out our new kitchen so I decided to make pie with a bunch of apples delivered by my very thoughtful mum.

I can now happily report that our oven is in great working order and this apple pie served warm with a scoop of ice-cream was the perfect treat to celebrate our move!

Thanks for reading.

Gluten Free Key Lime Pie

Gluten Free Key Lime Pie

While the limes were still cheap I decided to bake this Gluten Free Key Lime Pie. It’s a recipe I’ve made before but I made it again for my brother in law’s birthday and it’s too awesome not to share with you all!

It’s a great dessert. It verges on the texture of a cheesecake with a lovely tart flavour and such a great chewy pie crust made of cookie crumbs. The recipe is so simple to make. You’re guaranteed to love it! If you prefer a more traditional pie you might like my Strawberry Rhubarb Pie or Maple Pecan Pie.

Thanks for stopping by,

P.S. As you might have noticed, my cookie crumb pie crust didn’t travel right up the sides of the dish. I ran out of cookies. Rest assured I fixed it in the recipe below.
