Today’s new recipe is Gluten Free Rocky Road! It’s such a fun and easy slice to make and perfect for party season!!

I created more of a traditional rocky road slice using marshmallows, peanuts and coconut, but you can adapt this quick and easy recipe to include any ingredients. I’ve seen some recipes with pistachios, turkish delight or even white chocolate. Just remember to double check the confectionery you plan to use is gluten free if you plan to make a GF version.

Gluten Free Chocolate Honeycomb

This Gluten Free Chocolate Honeycomb is so tasty and easy to make! There is always the option to buy store bought honeycomb, but there is something so satisfying about making your own homemade chocolates. I feel like you enjoy them just little bit more (although what’s not to love with chocolate?!). You can also make the honeycomb alone to use in other cakes and baked goods, like the GF Nutella Cheesecake recipe I shared from my birthday. Yum!

It’s truly so easy to make and a lovely gift to include for Birthday or Christmas presents. Speaking of Christmas, I plan on sharing a handful of new recipes with you all in the final weeks leading up to the big day. I have been a little preoccupied lately with social events, sicknesses and starting a new role at work, so I haven’t had much time to bake. I promise to fix it all in the weeks ahead! After all, Christmas is one of my favourite times of year.

Gluten Free Chocolate Cake

Gluten Free Chocolate Cake - Lyla's second birthday

Saturday was my daughter Lyla’s second birthday and to celebrate I created a special Bunny cake using a Gluten Free Chocolate Cake recipe.

Now I wanted to tell you Lyla doesn’t have any diet restrictions, but there were three people (including me) who required a Gluten Free Diet. So with that in mind, I chose to create a Gluten Free version of Yotam Ottolenghi’s Chocolate Cake recipe reported as the Worlds Best Chocolate Cake. I also used a Chocolate Buttercream recipe from Sally’s Baking Addiction’s for the filling between the 2½ layers of chocolate cake and topped it off with fondant. The end result was this rather tall cake that required over 50cm of fondant and the purchase of an extra large rolling pin amongst other equipment. I created all the features of the bunny by hand too without any stencils!

I’m super proud of how the Bunny cake turned out having only decorated a cake using fondant once before, for Lyla’s epic first birthday party. Given how delicious the chocolate cake was and the fact it didn’t require a stand mixer or more than 2 bowls, I thought it was my responsibility to share the cake recipe with you all!

Gluten Free Nutella Cheesecake

Gluten Free Nutella Cheesecake

Sunday I celebrated my birthday with my two loves and this incredible Gluten Free Nutella Cheesecake! We ate cake at a park in the most glorious sunshine and Lyla sang the “hooray” part of the happy birthday song.

The cheesecake has a smooth creamy texture, with a gluten free oreo style biscuit base, nutella filling and ganache. I’m salivating just thinking about it. Lucky for me my husband made it. Jesse used Simply Wise Gluten Free Choc’o Biscuits (think Gluten Free Oreo’s) for the biscuit base that’s we picked up from the Gluten Free Food Show in Melbourne. He also made homemade honeycomb for decoration on the top of the cheesecake. I’ll be sure to link to the honeycomb recipe soon.

Gluten Free Chai Spiced Cupcakes

Gluten Free Spiced Chai Cupcakes

If you like Chai then you will LOVE these Gluten Free Chai Spiced Cupcakes! Even if you haven’t tasted chai before I still think you will love these cupcakes. I infused a blend of chai tea in the milk used to create the cupcakes and used a selection of chai spices in the mouth watering buttercream. The end result was a perfect balance of chai flavour without overpowering the recipe.

My piping skills are still a “work in progress” but I love these cupcake liners. If anyone knows of a great online store to buy cupcake liners from I’d love to hear from you. Just comment in the section below?!
