What better way to celebrate Australia Day than by baking these Gluten Free Lime Lamingtons filled with Lime Curd!

Inspiration for this Gluten Free recipe has been sitting in my kitchen for about a year and after tasting these Lamingtons I honestly don’t know why I didn’t give them a go earlier. Absolute madness! The lime curd adds such a fun and fruity twist to traditional lamingtons.

White Chocolate Christmas Bark Gluten Free

This Gluten Free White Chocolate Christmas Bark only requires two ingredients and is super quick and easy to make. It’s a perfect way to use up your candy canes before they get all soft and chewy.

I probably didn’t need any more treats in the house after all the gingerbread men, cherries, rocky road slice and Christmas cake that was consumed. I’m not really complaining though as it all tasted amazing. I have just decided to stop myself from baking anything new until all the leftover treats are gone.

Chocolate Gingerbread Men Gluten Free

This week Jesse and I made an army of these Gluten Free Chocolate Gingerbread Men for a Christmas present.

I love giving family and friends baked goods for Christmas and this chocolate gingerbread recipe is our favourite so it’s a perfect gift.  I had a ball decorating the gingerbread men cut outs – especially the ones with a leg or head missing. The cutouts were gifted to Jesse last Christmas.

We also made Christmas bark for the first time (a white choc version with strawberry candy canes pictured above). I might share that next time.

Gluten Free Mini Sticky Date Cakes

Monday night I decided I wanted to bake so I made these Gluten Free Mini Sticky Date Cakes!

I also decided to try an orange caramel sauce drizzled over the top compared to the more traditional sauce. It wasn’t as sweet as I sometimes find the traditional butterscotch/caramel sauce. So I managed the full cake + a scoop of vanilla ice cream just for good measure.

By Tuesday night I decided I needed Sticky Date Cake number 2. This time with the traditional sauce. Now the last mouthful was almost too much but you just can’t go past the traditional sauce. So here’s the recipe for the cakes with both types of sauce in case you feel like baking this week too.

Gluten Free Ginger White Chocolate Biscuits

I spent yesterday baking these Gluten Free Ginger White Chocolate Biscuits. They are one of my favourite biscuits (I love ginger) and always get me into the Christmas spirit.

While I haven’t had the chance to get organised for the festive season, leading up to Christmas all I can think about is food. Christmas pudding, Christmas cake, minced pies, gingerbread… yum! So in a few weeks time you can expect to see pictures of gingerbread (my favourite Christmas treat). For now, enjoy these Gluten Free Ginger White Chocolate Biscuits, I could honestly eat them all year!
