Gluten Free Almond, Cranberry and Pistachio Nougat

Last week I made this delicious Gluten Free Almond, Cranberry and Pistachio Nougat. Not a bad effort for my first attempt at making Nougat! It’s got that perfect balance of chewy sweetness and a little crunch and wasn’t at all hard to make. You just need a good candy thermometer and some patience to let the nougat set before you can take a bite!

Thanks to the Queen website for the original recipe. I made a few small modifications for my own taste preferences and ease of baking.

In other news, I missed posting new recipes over the last two week thanks to a nasty bug that got the better of Jesse, Lyla and I (my husband and 19 month old for those new to my blog). Thankfully we’re all on the improve now. I’m also really close to being allowed to start rehab after my recent back surgeries. I’m so excited! I plan on making an extra few treats to celebrate this weekend!

Mini Carrot Cakes Gluten Free

Gluten Free Mini Carrot Cakes

Today II’m sharing these Gluten Free Mini Carrot Cakes with Cream Cheese Icing. I was craving cream cheese icing and these carrot cakes certainly hit the spot (and then some) for afternoon tea. Though in all honesty I made these cakes for friends, as a way to say thank you for all their recent support.

Speaking of support, I couldn’t have made these cakes without Jesse’s help (that’s my husband for those new to my blog). I’m sure I irritate him at times but I don’t think he truly minds helping me in the kitchen when he gets to “taste test” the recipe at the end of it all!

These Gluten Free Peanut Butter White Chocolate Blondies are the perfect treat for morning or afternoon tea this Mother’s Day!

They’re super quick to make, taste heavenly and only require one bowl for mixing, so what’s not to love? If you’re looking to impress your Mum with something a little different I’d also highly recommend my Lemon Curd Cheesecake or Pecan Blondies. Yum!

Although I don’t get the chance to celebrate with Mum this weekend, I’ll be sending her these treats to enjoy while she’s busy creating floral arrangements for all the other Mums out there to enjoy.

Salted Caramel Chocolate Tart Gluten Free

What better way to get back into baking than with this Gluten Free Salted Caramel Chocolate Tart! It was really therapeutic being able to do something I love, even though I needed some help with baking (I’ll be limited with moving for some time yet following my back surgeries).

If you want to impress friends over dessert I’d highly recommend you make this tart! It’s seriously restaurant worthy, but quite rich so you only need a small slice.

Gluten Free Easter Bark

This weeks recipe is Gluten Free Easter Bark. It’s a simple and tasty way to use up your leftover Easter eggs. Though I’m a little late for this year, you could also make some to gift to loved ones or take it to work if you really want chocolate out of the house!

Speaking of Easter recipe being a little late though… If you follow me on Instagram you might have noticed I’ve been unwell recently. I underwent spinal surgery a 1½ weeks ago and it’s been a little tough for me and my family being so immobile. I didn’t get the chance to mentally/physically prepare for the surgery or the slow recovery process so bear with me if my blog is a little behind schedule.
