Guest blogger Jesse here sharing this delicious Gluten Free Coconut Caramel Crunch Slice! You see I was tasked with creating a sweet treat for The Naughty Dietitian’s work colleagues, so I thought a good old fashioned slice might do the trick. Golden syrup makes any dessert amazing, and combined with coconut, you can’t go wrong.
This slice combines a buttery coconut biscuit base with a sweet caramel filling, and is finished off magnificently with a sweet crunchy topping. Hope you enjoy!
P.S. If you prefer the more traditional Caramel Slice, how about trying my Dark Chocolate Salted Caramel Slice (Gluten free).
Caramel slice has always been on the list of treats I wanted to make gluten free, but hadn’t quite got around to it until now with this Gluten Free Dark Chocolate Salted Caramel Slice.
Fast forward several years and I finally decided to give it a go, adding my own little twist. End result was this Dark Chocolate Salted Caramel slice and it is truly AMAZING.
Not usually one to toot my own horn, but after tweaking the recipe this past weekend and taste testing the slice again (hey someone has to do it) I know you will love it! How can you go wrong with the combination of salted caramel and chocolate?
Thanks for stopping by,
This past week called for a new summer dessert, this Gluten Free Mango Macadamia Ice Cream Bar. Filled with fresh mango and a tasty macadamia and ginger based biscuit top, this ice cream bar looks almost like an upside down cheesecake. What’s even better it doesn’t require churning or an ice cream maker!
This dessert is something I have been wanting to try for a while so I thought I’d take the opportunity while mangoes were cheap. It tastes just divine and easily serves 10 people!
Now all that’s needed is a few summer days to enjoy it. Thanks for stopping by,
The Naughty Dietitian
Last week I had the urge to bake some new treats, but I didn’t have a lot of time so I decided on this Gluten Free Coconut Ice Slice. It only took 45 minutes to make from start to finish and has a great balance of flavour with the coconut ice topping and biscuit base.
Do you have a go-to recipe when you’re running short of time?

After a few busy weeks I finally got back into the kitchen on the weekend and made a this Gluten Free Lemon Curd Slice. It’s a gluten free version of Meyer lemon bars, or “slice” as we call it in Australia. These bite size treats have been on my todo/bake list for a while now and they didn’t disappoint.
If you like the tangy sweetness of lemon curd you might also like the Lemon Curd Cheesecake I made for Jesse’s birthday last year or these Lime Lamingtons I made for Australia Day with a lime curd filling.
Hope you had a lovely weekend. Thanks for stopping by.
