This Gluten Free White Chocolate Christmas Bark only requires two ingredients and is super quick and easy to make. It’s a perfect way to use up your candy canes before they get all soft and chewy.
I probably didn’t need any more treats in the house after all the gingerbread men, cherries, rocky road slice and Christmas cake that was consumed. I’m not really complaining though as it all tasted amazing. I have just decided to stop myself from baking anything new until all the leftover treats are gone.

- 100 g candy canes I used Coles strawberry candy canes that were gluten free
- 220 g white chocolate, chopped
Line a 9 by 12 ½ inch tray with baking paper. Smash up candy canes into small pieces using a mortal & pestle.
Melt white chocolate in microwave and then pour into baking tray. Spread evenly. Immediately sprinkle desired amount of candy canes over chocolate. Refrigerate until firm, about 1 hour.
- Peel off baking paper, and chop or break bark into pieces.
Oh my! I love this!! I will have to try it with my left over candy canes, but maybe some with raspberries!!
